Dried hot peppers

I've had an electric dehydrator for a couple years now , given to me by a friend , who got it at a yard sale...anyhow , I usually grow hot peppers in my garden. Habanero , jalapeños , cayenne , Italian hot cherries Hungarian wax peppers....all kinds.
This pic shows left to right the dried peppers I have saved right now....the big old mason jar has whole dried habaneros , which are easily reconstituted and used in chili or jerk sauce. The middle mason jar is dried crushed habaneros (put thru a food processor) ....this I use in a lot of ways and brother , let me tell you , a little bit of this goes a long way. The small jar on the right is dried crushed cayennes with a few jalapeños mixed in (these were pretty much all still green when I dried them , so the dust is green , but it too is very hot. I also dry basil and sage which I grow.

I get a lot of good Chiles from my neighbors and have Dried them in a small plastic drier. Came out good , but this year I'm gonna use the AMNPS to smoke dry them . I have Jalapenos and Thia Chiles. Be good as a flavor booster.

Have my old 'bullet smoker' outside the Kitchen , so I can keep it going for some time there , will try to dry them - maybe a long 72hr. Smoke

I quarter up my habaneros, scotch bonnets & cherry bombs & slice my Hungarian wax peppers & jalapenos in half. I then dry them in my dehydrator till they are completely dried. Once they are dry, I put on a dust mask & pulverize them in a large mortar & pestle & store them in their own individual jars. To keep whole peppers I just cut the tops off & freeze them. Works great for me between the two...

Myself , I just got a WSM , and up to now , had never considered smoking peppers , but I'm thinking next year I'm growing jalapeños galore and making my own chipotles !
I have no idea how long it takes to dry chilies in a smoker , tho. I'll be curious to read what you learn on the subject.
