Had 3 smaller eye of rounds curing for dried beef and a bottom round for pastrami.
12 days in, so I sliced into thickest to see if cure did it's thing.
Looked good, did fry test. Salt taste test was good.
After couple days resting in fridge. 1 in front bottom rd, others eye of rd.
Sliced up for sammies and Ruebens.
