I always rub my butts for pulled pork around 24 hours before I smoke them. My questions is do you guys uaually inject them (if you do) right before you put them on or do your inject them when you rub them? I am just trying to decide what to do with mine.

If I inject them I do it the night before and leave it in the fridge

i actually brine my butts 48 hours be fore the smoke (in the brine for 24 hours), then rub 24 hours before. i have had WONDERFUL results with this method.

I would inject them the night before so it has time to mingle and get to know the rest of the butt.

Well I injected it and rubbed it today and I am smoking them tomorrow. I have plenty of injection left over I was thinking about using it for a spritz instead of making more. Here is what I injected it with do you think this will taste fine as a spritz? I think it should.

1 QT apple juice
¾ cup OJ
¼ cup cider vinegar
¼ cup hot sauce
¼ cup brown sugar

Next time I am going to try and brine it.

the brine i use is:

3/4 cup molasses
1/4 cup honey
1-1/4 cup pickling salt
8 cups distilled water
2 cups apple cider vinegar

I've done it both ways, depends on how much time I have. But I always inject for pork shoulder, especially since I am not going to be doing any mopping in the MES. If I inject when applying the rub, the next day when I am ready to put the meat in, I inject again, because a lot leaks out.

Enjoy your Christmas pork shoulder...

Merry Christmas

On butts i do it about 24 hours ahead...Alot of friuit juices etc..can tenderize a bit and you surely can sweeten them as well....
