Hello fellow meat lovers.

I've got a couple of groups of friends coming over next weekend. We'll have 6 adults and 8 kiddos. Anyway, I'm running through my mental check list of what I want to smoke and trying to finds ways to be creative. Then I realized that I don't really have any creative recipes. I'm basically a brisket and pork shoulder guy.

So if you don't mind sharing, does anyone have a special dish or recipe that you pull out when you really want to impress the guests?

Fair warning! I fully intend to steal these if I think I can pull it off, but I promise I'll give full credit to the owner.

It may make it it a little difficult when you're combining adults and kids. My recipes/smokes are mainly for adults. Good luck my friend.
 
I got these off SMF and cannot take credit, but they are good for kids and pretty easy to make.

Sliders on the drum

I usually make sliders in the house but wanted to try a batch on the drum.
When I make these in the house, I just brown the burger and spoon it onto a bun instead of forming patties.

I mixed 1 1/2 lbs of burger with
1 pkg of onion soup mix
1 egg
some worcestershire sauce
about 1/3 cup of catsup
and 1/4 cup of water.

Wrapped some of the patties in bacon..



Smoked with a small bit of mesquite,
I put them around the outside of the drum, it cooks cooler than the center.



They took a little over an hour..



I use hawaiian sweet rolls for my sliders. I just like them the best.



I cut the rolls open, add a burger and top with cheese. Then flatten them with the palm of my hand.



The flattened sliders go back into the cooker for 15 minutes (wrapped).



They are ready when the cheese is nice and melted..





The sliders with some smoked tater chips...



They were tasty!

 
First off I believe that you will give ownership praise and the checks in the mail. Just kidding we will give you to recipe and the rights to ownership because most of the time thats how we got them. How about the fattie not well known but always goes well even with the young ones. Maybe some smoked eggs for deviled eggs it's a new take on an old recipe. Then maybe try to make your own bacon cause it's easy but it takes a week. Maybe you can make your own pastrami from store bought corned beef then slice it and make sammies. Theres a few not to many off the wall but I'm sure someone here will come up with something you can steal
 
How about smoking some chicken thighs and wings - Yoshidas is killer on them

Also for a snack - smoke a can of mixed nuts - I have some going in with a chicken and some taters in about 30 minutes

I found my friends kids really liked them once they got over the fact they were eating veggies (peppers).

Also Armadillo eggs, which I have not posted yet, though there are a ton of recipes for them. They are basically hard boiled eggs wrapped in sausage wrapped in bacon and smoked. I also then covered mine in my bbq rub mix.

you can also grill up some boneless skinless chicken thighs.

Trim them up and let them marinade in your favorite italian dressing.

take them out and dust them with your choice of bbq rub.

Grill till just about done and coat in any thick and sticky BBQ sauce.

Let them finish on the grill, the bbq sauce will just slightly char.

These are all great cold smoked & seared meats on a charcoal kettle grill, which can be ready in an about 2 to 2.5 hours with prep time;

Those are all dishes I came up with here at home and we have all been very satisfied with them. The cold smoked and seared meats are my biggest hits for the family, with unanimous rave reviews on all of them.

If you only want to make one dish that most anyone would enjoy eating, I would suggest the cold smoked & seared Chicken Thighs...the flavor is over the top.

I know this is alot to look at, but, you asked for it!!!!! LOLOLOL!!!!!
