Nice looking Dawn bet they were good.

As far as the butchers trimming them that way they don't. It is done at the packers with a mechanical de-boning machine.

Just look, or ask the butcher to bone one out for you, you will probably pay more but you will get some meat. I saw a pack tonight but didn't pay attention to the price.
 
Those look amazing! I wanna do some...how do you know when they're done? Is it strictly by the meat pulling away or is there any way to check temps?
 
I've always used the meat pulling away from the bone as the indicator that they're done. Now, I've only done them twice, but both times it was right.

Ribs aren't really meaty enough to use a thermometer with.
 
With that wind blowin yesterday, I think I could smell you smokin these!!!

They are great looking! Haven't done any for I guess almost two years now, I'll have to rectify that this spring!
