Different types of Wood

I am curious and wanted to know what, if any, is the difference between Sugar maple vs regular maple and cherrry vs black Cherry wood.

also if i decide to but beer or apple juice in the water pan, should i mix it with water or put it straight

Water in the pan is mainly just for a heat sink and to add some steam, In my opinion it doesn't really add flavor just some humidity to aid in smoke penetration. I use sand in my water pan to act as a heat sink.

Any tree that was a fruit or nut tree is good, wild or not. And a lot of folk on here wrap in foil and add "something" to the package. Makes no difference what it is, just a flavor enhancer.

I don't use the water pan for water. I have it double wrapped in aluminum foil (to keep it cleaner). When I do a brisket or pork shoulder, I just put one of those aluminum foil pans under it with whatever liquid I want at the time (which lately is Chef JimmyJ's Au Jus.
