Did "Bearcarvers" unstuffed snack sticks with Qview

My first attempt at making these and it was easy/fun/and final results were rewarding! Thanks Bear!

Followed the recipe from Bearcarvers "Step by Steps" and my wife says they are great! For me that is the "final answer"


Spices all ready and mixed with 6 oz. cold water


pour on the meat, 80% elk ground with no fat and 20% ground pork


used a Cabela's jerky gun to make sticks, sprayed the racks with Pam to keep them from sticking

and it also made the raw sticks go onto the rack easy, They were easy to move around without casings!


And the final product ready to package. I was going to vacuum pack some but I think they will be distributed

amongst friends and gone in no time. I see another batch on the horizon soon!
 
Looks tasty... I always do my deer sticks this way and add pound of ground pork to every 4 pound of deer. Always work out great.

Why stuff casings and such when theres no need

They worked for me! I had never done them and don't have matts of Bradley racks so was concerned that they would fall apart. NO problem though and with the racks being sprayed with Pam, it was like the sticks came out of the end of the gun a slid right across the rack
