Detroit Pizza question

So I been waiting for couple months now to make Detroit Pizza and now is the time. Looks like sauce goes on top? Does this really work? From what I can tell dough first, then meat, then cheese and top with sauce. Any suggestions would be welcome.
 
Check this out, it's just a pizza as far as I can see, little different order of ingredients. Mine are better, a lot better! RAY

 
If you are into pizza you simply must have the Pizza Bible, but heads up it's intense. Dough recipes are based on weight multi phase/day steps, etc. Whole chapter on Detroit pies. I recall there is some debate on the topping order but I am of the opinion it is like most with added extra sauce on top. Some disagree and say sauce only on top. I plan to get into this style once I make some spicy pepperoni, which IMO is real hallmark of the style. From Ohio and spent much time in Motor City...

Do you have the author or ISBN of that book? I have found more than one author for that title.

I cant find the thread but John Smokin' in AZ Smokin' in AZ did one awhile back and it looked great. Maybe he can chime in and give you some guidance.

Guess will try to stick to the video. I grew up just outside of Detroit and did not have pizza's like that but that was a long time ago. Trader Joe's pizza sauce one of the few red pizza sauces I like and might use that. Probably be a couple more months before eat pizza again so don't want to screw this up.
 
Sorry, missed that part. I take it you don't like Detroit style much :)

I don't like any pizza, any style, as much as the ones I make at home. I make my own dough and sausage, so I use about a pound of sausage as opposed to sprinkling on a few crumbs. All of the other ingredients are top notch and not cheap. My pizza weighs around five pounds when it goes into the oven, and now I can hardly wait till tomorrow, made the dough Tuesday and it's in the fridge proofing. Oh yeah! RAY

This has been another great pizza thread!! I'm still trying to dial mine in but the pizza you just shared the pics of looks amazing!! Right up there with some of the best I've seen here, and I've seen a bunch!!

Well I am from Tn but some how or another I awoke in Detroit in 1964, I was 3 years old and some dang how we were transported , mom had gotten a job with Fisher Body, we stayed there a very short time and moved to Lavonia, Mt Clemens then Rochester hills ,at 11 years old we came back home. I eat plenty of Pizza while we were there but almost 50 years latter I couldn't tell ya if it had sauce on it or not lol I will get back up that way in a year or 2 just to look around and will make sure I try some out and report back.
