Dan Doodles

Anyone here smoke Dan doodles?

Me, not knowingly. Since I've never heard of them. Are they some type of cheese doodle?

Never have but I would think same as a twice smoked ham.They're hard to find up north here in Va.

A dan doodle is country sausage, usually laced with lots of red pepper and sage, stuffed in the membrane from an adult male pig's scrotum. It is very old school coon dog style sausage and 50 years ago was very common along the eastern seaboard of Virginia and North Carolina. Some folks will tell you it's stuffed in the large hog intestine, but that is not a true dan doodle.
