Got up this morning to start a run of jerky and as I'm connecting the propane tank, the regulator falls apart. Looks like no jerky for me this weekend.  I have the meat all seasoned and ready to go and it's even on the skewers already.  Will it be okay to freeze it until I can get to it next weekend?  I'm thinking just unthaw it and carry on but have never had to do this.  Looks like Easter is shaping up to be a blast.  The morning began at 4 when my county phone startled me awake and it was the Lt. calling to tell me to go photograph a dead guy in an officer involved shooting.  Soon as I get myself good and awake, he calls back saying never mind one of the detectives in training will do it for us instead.  So anywho, now I'm wide awake sitting here with my coffee and being pissed that I will have no jerky.  Guess it beats a previous Easter when I had to go work a cartel related scene where they swiss cheesed a guy and his truck for ripping off their dope.  Holidays should be about avoiding relatives, not these kinds of difficulties

Hazards of the profession.  I "escaped alive" after my 35 years (1/2 of which was in Crime Scene, so I feel 'ya).  Look at the bright side, at least you are not having as bad of a day as the perp who is DRT and an officer is going home to his family instead of reporting for "end of watch".

Sorry to hear about the smoker, but hey! It's fixable.  I don't know about freezing cured meat, but since the cure is a chemical process and should have done it's thing by now my guess is it would work in a pinch.  I'm sure others with more knowledge than I will report in soon.
 
Guess you're right about that.  Better than a stinker in a closed up trailer house in the middle of July.  The chemical cure is my concern.  Oh well, I just stuck it in the freezer and we will have to see.  Hate to toss out all of that great brisket I'm using over a broken piece of plastic.
 
Scooby sorry to hear your bad luck. You can use your oven to dry the jerky, if you can set a low temp. just an idea.  But i have also frozen marinated jerky and thawed and smoked....came out just as good
