Wood? I assume I use olive oil, rub it down and put into the oven at 100 for a few... it'll soak in faster. Then rub again...good to go

They make oils that will keep your board treated. Use them! Both sides! My oven will not go down to 100F, so I don't do that.
 
I stick to mineral oil on my wooden boards, and wooden cutlery handle. In theory, a vegetable based oil can get rancid. I also sand wooden boards down every few years. I know for a time our local health dept. would not allow the HDPE boards because they didn't feel they could be sanded down like wood, and all the little scratches could harbor bacteria.
 
Cooking oils can go rancid with time, mineral oil won't go rancid and it is edible.
 
Yeah, they can. Just never had an issue with my food picking up anything from my boards, so I guess I had not considered that. <I'm a knife demon LOL!> Guess I'll switch to the mineral oil.
 
Look at the ingrediants on the special oils for cutting boards. Its pretty much mineral oil. A good coat here and there and its good to go. Never put a wood cutting board in the washer.
 
yep, I concur with everyone else. Use mineral oil, never any kind of vegetable oil. Pour it on and rub it around until it won't take anymore, let it sit for a little while and then wipe off the excess. Once a day for a week; once a week for a month; and there-after, once a month or whenever it looks dry. Always wash with hot soapy water and never ever put it in the dishwasher.

Another advantage of wood cutting boards over plastic is that they say the wood acts as a natural anti-biotic, so the stuff that does soak into it is naturally taken care of, where-as with plastic (which is porous btw) the stuff that soaks in, and gets trapped in all those little cuts can thrive and grow into some nasty bacteria.
