Curing Closet + Pantry? Where to start?

Hi -

This is my first post, so sorry if this has been covered quite a bit, but I'm not sure how to google what I'm looking for.

My wife and I have a fairly modern designed home that the builders originally designed to be a live/work space. Because of that, we've ended up with an awkward 1/2 bath downstairs behind the kitchen, where it would be very natural to have a pantry instead. We still have an additional full bath downstairs in the 'work' area of the house, so I'm not worried about losing the 1/2 bath.

What I'd like to do is meet the desires of my wife to have a bit more of a pantry downstairs, but also see if we can turn it into a space suitable curing meats. I'm going to be butchering a whole hog later this summer and want to have a place to hang a 2 of the legs to cure.

I'm looking for resources on considerations to take into account when building out a curing closet, and to see if there's a way to make it compatible as a pantry. My inspiration is something along the lines of what Redd Wood Pizza in Yountville has:
