sorry Folks, But I posted as a newbie, and messed it all up!
I managed to save some info from
Pops6927, with a curing brining recipe.
What I guess I need now is Help with curing/brining times as well as Smoking times in a Pit Boss Blue Blazin 2 smoker. Wanting to do pork tenderloin and also some chops!
Help please .

Here’s pops updated brine post, it also gives times for different cuts and tells how to figure for thickness. I follow this and have no problems at all.

And as far as times I guess that’s gonna be dependent on what exactly your smoking and if your hot smoking or cold smoking. The first ham I cured I was nervous about it being brined to the center so I hot smoked just to be safe. I cooked the ham to an IT of 145

Thank You, this helps!
Going to do a couple Pork Tenderloins and maybe a few chops as well.
Want to do more eat it today, rather than keep it for an extended time!
Is Kosher Salt acceptable rather than Sea Salt?
Thanks
George

I converted the sea salt to kosher salt on a calculator on Morton salts website and it works just fine. By eat it today I assume your wanting to hot smoke? Either way I would do a search of hot smoke vs cold smoke on here and see which result more suits your needs. Someone, can’t remember who or I would tag them, said that with cold smoke the smoke penetrates deeper into the meat than with a hot smoke.

Yes, I would prefer to Hot smoke, quicker end result, :).
Wondered about Iodized Salt, so will
Check on Kosher vs Sea salt.
Thank you

No problem, and good luck. Hope we get to see some pics of the results!

Thanks, Will do some pics if I can remember. Hopefully this week end!
