Had plans for a Christmas Eve ham dinner but Prime Rib went on sale and we just couldn’t pass that this baby up!

Decided to do the whole treatment on this one, so in preparation for the dry brine it got fat and silver skin trimmed then rolled round with the rib cap intact!

It got a little salt in the inside of the rib cap then salted and wrapped in plastic......

And now we let it brine over night......going to kick off the Aus Jus in the am with some of the trimmings and bones.....I’m already hungry!

I'll be watching civil! Trimmed up up and tied like that every bite will be money! I broke one down Monday. We are doing just a portion of the "eye". Only the 4 of us this year and the kids wont eat a lot. I saved the cap for another cook..
 
Anxiously waiting for the finished meal Civil. We know it's gonna be mega great!

Thanks SOW! That’s the plan no cutting as you eat just hogging it down. There are only 4 of us but leftovers baby! Your 20lber is crazy big!

Thanks Jake! I figure it would be better to trim when it s cold rather than on the plate. Plus I’m just loving my little knife. It’s like a big razor blade and just melts through the fat silver skin!

We have high hopes for sure Jim! The butcher did us a solid and saved us a nice one!
 
Since is Christmas Eve, I wanted the Aus Jus to be over the top so all 4 bones and trimmings went under the broiler this am for a little color

And they are now simmering in 3 pints of beef stock, 1c of red wine, and 3 tbs each soy s & Worcestershire..... holy crap the house smells sooooooooo goooooooood.....oh and another reason I’m going for a hike, I’m ready to start eating NOW not 8 hours from now!

lol I should saved one from the jus! And thanks I needed that....had to break down and have a leftover piece is fried chicken.....that helped take the edge off!

kinda cool this dad has had his kids out on the ice every weekend over the past month fishing. We watched one of them bring in a huge one last week.....just cool!

Ok it’s time to season and start the magic.....I have to share this pic, this is how the cap and center blend together with the silver skin removed and a nice overnight rest!!!

so I gave it a light Worcestershire coat then made up a spice paste...

the spice paste was made with a bit of water then rubbed all over to give it a nice thin coating....

I let that set up for about 20 min then on the pellet at 225 only to wait again......thinking about 4.5 hours and it will be good to go.....if it’s running behind I will probably reverse sear, it if not will just let it roll....

I haven’t added any Demi to it yet and I’m thinking it will won’t need it....the bones are full of flavor!

bingo pulled it at IT 130 and then into the house oven at 130 so we could finish the rest.
