I've had a slightly different version of this. One of those things that with a bag of fritos scoops will disappear quickly!

It "was" a 2002 C5.
I got this hairbrained idea to get a Real Estate license and sold it to get a 4 door (Impala SS).
Turned out to be a bad idea, as people would rather meet you at a house to look at than ride with you.
Also, I finished all the classes and got my license just as the housing market took the big dive in 2008.
Live and learn...

Sounds great; gotta' try it. Many of the ingredients reminds me of my mom's old bean salad. Might recommend trying some chopped celery...adds a nice crunchy texture without a heavy flavor penalty.

Don't know why I didn't post a picture with the recipe.

I too have a slightly different recipe and sub in poblanos and jalapenos for the bell peppers. I use corn on the cob, I grill the corn, peppers and onions before making it.
