Thought I would try something new. I've been smoking for about a year or so and have made a lot of progress. The wife has been so impressed that she upgraded me from the Master Forge vertical propane Lowe's clearance smoker to the XL Big Green Egg on my 30th birthday.
I've recently decided that I like rib tips more than actual ribs, so I decided to try something new with Country Style rib tips.
My basic rub is a variation of the Bob Gibson rub, but I typically eyeball it and go really heavy on the red pepper.
1/2 cup white sugar
1/2 cup paprika
1/4 cup garlic powder
1/3 cup salt
1/4 cup brown sugar
2 tablespoons chili powder
1 teaspoon oregano leaves
2-3 tablespoons cayenne pepper
1 teaspoon ground cumin
1 teaspoon black pepper
Today's smoke - 7 lbs of country style ribs cut into ~3 inch strips. Glazed with mustard and covered in the rub. Currently smoking at 260 with hickory and apple. After an hour, I sprayed with apple juice/oil.
