After starting an bussiness adventure we quickly realized we need more money so unfortunaly my smoking is getting cut back.

Last week my wife bought some pork loin ribs to cook in the crockpot (which is very very good). We decided to eat left overs instead so I get to smoke them this week to satisfy my smoking craving plus it was free this week.

I had some left over rib rub from last week, so I covered the ribs in brown mustard (also had in fridge) then smothered with rub.

Just put them in the smoker at 240 with hickory chips (also had a couple bags laying around).

Thinking about doing the 3-2-1 method. Any suggestions?
