Got a Choice 3-rib roast for a decent price; I actually paid under $46 with a digital coupon. Dry-brined overnight with some SPG, and then hit it with some Trader Joe's Everyday seasoning.
Went on the GMG at 325° for about 3 hours, with Pitboss Competition Blend mixed with some mesquite pellets. Got it up to 120° IT, then a quick sear in the oven at 500°. Sorry, not shots of it sliced, I was just too busy plating. The last shot is one of the ends (my favorite).
