Could I use Walleye for Lox? In the part of North Dakota I am from the only Salmon I can find is frozen. I would like to use a fresh fish not something I don't know how many times has been frozen and unthawed. Walleye, Northern, Crappie, and Perch are easy enough to catch year round. Can someone point me in the right direction.
 
Frozen salmon is fine, in fact not a bad idea since some of the baddies would have been wiped out from the freeze. Salmon is an oily fish and helps makes lox what it is. Walleye, though a wonderful eating fish, would not work well for lox IMO. A rainbow, steelhead, char or lake trout would probably work as they are (somewhat) "oily" fish. Rainbows and steelhead are in the salmon family, lake trout are a char.
