Oldest girl wanted cornish hens. Found this forum and did Tips brine For 4 hrs, rub  then smoked with a orange juice based glaze. They loved it. I just tasted smoke and good bird. Do you do enough smokin that you pick yourself apart and are looking for all the flavors you put on?  Yhanks
 
We're all our own worst critics. One problem is that after spending all that time around the smoker, you're kind of saturated with it. Your taste buds and sense of smell are not going to be at their best. Try taking a shower before eating, it sounds silly but it makes a difference in the way you'll taste your food.

Every time...... I will sit there and literally rip myself apart so much I can't eat or enjoy it. I usually end up not eating much. I will then go back later and eat more again if any was left and enjoy it more.
 
dave, morning....  Yes about picking recipes apart.... everyone has a taste profile in mind when they make anything....  In your brain, somewhere you have tasted a chicken, or brisket, or salami that "sticks" in your head and you want to make it, or improve on it, to your particular liking.....   If you are not doing that, you may as well buy from the grocery.....

My 2 cents.... I love making great food.... just haven't got there yet....  Dave
 
I get there. Its just over this holiday everybody wanted me to do my thing and love doing it. Guess so much other junk(sweets and all which we have been staying away from) couldn't  get a good taste of  what I did. Great next day. They all wanted to take it home. Inlaws bought the loin, so didn't give two cents.   Then have made meat that couldn't  get enough of.  maybe its a family thing.  Got a sister left anmd rest is wifes family which gets old. They don't do what I do, counting bambi huntin
