Figured it was the time of year and I’d join in the fun. First corned beef to pastrami.
Turned out okay took 3lb soaked 6 hours changing water once and then putting on rub and in to the fridge overnight
On smoker at 225 for about 7+ hours smoker started to act up so pulled it was about 190 wrapped and rested then into fridge last night pulled it out today and sliced it up was good will be doing another for a bit longer if smoker coperates

Great start!
I've only done it once and that was from store bought corned brisket. It turned pretty good, too.
Not sure where you live, but the store deli pastrami is around here is really bad.

I am doing a corned beef pastrami as we speak. I soaked it 24 hours with several water changes, then added the rub and let it rest uncovered in the ref'r overnight. Yesterday I smoked it @225F for 6 hours to an I/T of 145F. Then it went into the sous vide bath at 155F for 24 hours. Right now it is still in the bath. This in kind of an experiment as I have not done the smoke/sous vide pastrami till now.
