Cooking pork ribs over fire and splitting wood

Getting better at this. Been Raising my cooking grate up a little so I can have a bigger fire going. These took 5 hours today and could get my temp gauge to work I don't think. The gauge read as high as only about 185 and the ribs looked like this. Figured the gauge was not telling the truth this is the most done I've got my ribs so far. Didn't put any BBQ on either because I didn't have any. Put the in foil after 3 hours for about 1.5 hours
 
Here's the log spliter. All custom made it used to have a predator 6.5 hp motor but it wasn't enough power even geard 10-1. I build it up but i decided to get a 11 hp Honda gx340.
 
this is with the 120$ HF motor. It would die with this motor on though pieces and I need to take the chain off and struggle to turn it the other direction. Lol
 
Thanks for the kind words Al! Are the ribs bones visible from the top before 195-200 often? U could see bones pulling on the backside. Thought I posted this few days ago sorry
 
Made some ribs again today. Baby back pork. Brined them last night for about 4-5 hours then rub and let sit on cooking plate in fridge over night. Started the fire with cherry to get good coal base then cooked with all plum that I took down the whole tree myself.
 
cooked it for 6 hours today. 1 hour in foil. Try the temp gauge and it's working. Got these ribs up to about 190. Less in the meaty side. But I'm learning that these ribs take a while even if the bones are pulling and looking done. These were my most tender so far but didn't like the peach flavor Arizona I was keeping it moist with. And I diluted it about 25$ water because it was way to fruity to drink
 
Tasty looking ribs, you may want to work out a rotisserie setup for them.
