    Thats how we do it now, from same video.I like how the checker board pattern of bark to inside meat develops from putting in container and turning over.We put our money muscle slices behind the pulled.One thing we are going to do this year is dip meat in sauce like he did.Maybe that will get us up from a consistent 6-7 place.Thanks.
