Ok all, I am tasked with doing a cookout for my company. I have just over 30 people to cook for. I did pulled pork not long ago and trying to figure out what to cook this time. Toying with doing butterfly chops on my grill and basting with barbecue sauce, doing pulled pork again, or some other idea. Any ideas or input would be greatly appreciated. Kind of hoping that I don't need to come in at midnight again to do this, lol.
 
The chops sound like a great idea, i like ti get the thick cut rubeye pork chops put a good rub you like and hit them at about 300 for 1 hour or a little over, you can dou them on almost any smoker, i like the mccormicks maple , it also works great on grilled pork steaks(AKA) pork shoulder
 
I have done the cook for the company thing a couple times. What I did once was make about 5 racks of pork ribs and two racks of beef ribs(had couple people who didn't eat pork) and had everyone bring a side or dessert. now if you are doing the entire thing it might be wise to do a brisket if you smoke those and about 3-4 racks of spare ribs. cut the ribs into individual bones and slice the brisket and make burnt ends. they will be a hit! for sides smoke some abts as well as have some usual cook out food (potato salad, pasta salad, banana pudding, etc.) one packer and 4 racks of ribs will feed close to 50 people with sides. Just a thought.

I like the brisket and ribs idea above. Also pulled chicken and pulled beef feed a lot of people. Another idea is smoked turkey. Birds are usually fairly cheap even this time of year and easy to do. Could do a few chucks roasts for pulled beef and a couple large spatched turkeys. Throw in some smoked mac and cheese plus the other bbq sides mentioned above.
 
Yep. 2nd vote for chicken. Whole, spatchcocked, then pieced out and pulled (breast portions).

Easy, cost effective and people seem to go nuts over it.
