cold/low temp smoking this weekend..............MUSTARD!

I've spent the past two days smoking sea salt/granulated garlic/parsley to make my own garlic salt (heavenly), and got this crazy idea to toss some wet mustard in there too. OMG! The mustard took on a really cool flavor, and today I've tossed some chipotle powder in with it. I'm smoking about 6 hrs at 150 degrees. Not enough to cook anything, but just warm it up, don't really know why to tell the truth. I decided to toss 2 dozen eggs in there today, just to see what happens. My sister is convinced that her chicken eggs will absorb smoke through the shell, so I'm looking to see if I can slowly smoke them and get them to the consistency of hard boiled eggs. I've got a dozen of her chicken eggs, and a dozen store bought, just for testing purposes. Sadly, I have no way to tell if they are cooked enough, but I'll test when it's all said and done.

No pictures, nothing to share, yet.

Interesting, the smoke does seem to penetrate the egg shells. After 6 hours, they are just shy of being soft-boiled consistency. Gonna toss them in some boiling water for just a few minutes. Fun taste for raw eggs in the shell!

Spin the egg on it's pointy end like a top. If it does spin on it's end, it's cooked. If it wobbles and immediately falls over, it's not. Also you can lay the egg down and give it a spin on it's side for a second or 2. Then stop it, and immediately let go. If the egg just sits there, it's cooked. If it starts to move again on it's own, it's raw.
