Smoking a rack of St. Louis today using Jeff’s naked rib rub. Realized I need to make some more rub and turns out I’m low on Paprika. Didn’t feel like going to the store so I subbed in more than a 1/4 cup of cinnamon. At 2.5 hours now and just sprayed with orange juice. (Out of apple juice too lol) tasted a piece of the trimmings. This might be a keeper!

Depends on the quality, type and freshness of the cinnamon or any such spice- nutmeg, allspice, ginger powder. All wonderful! but need to work those up if unknown quality or strength. For example I use Saigon cinnamon which has 1-5% essential oil in content and 25% cinnamaldehyde in essential oil, which is the highest of all the cinnamon species.
