I'll preface the post by stating that this is about the ugliest meal I've ever posted here. What it lacks for in presentation though it more than makes up for in flavor. It was outstanding!! It was also very quick and very easy to put together. The idea for this one came together by way of a pizza thread recently where somebody posted a marinara (pizza sauce) that was made with San Marzano tomatoes and one spice (don't remember if it was salt or pepper). It sounded good....almost too good to be true it was so simple. Well, I made some and it was outstanding!! I did tweak it just a tiny bit but still a simple and amazingly good sauce.
Start with some boneless loin chops
Slice some red and yellow bell peppers, onions, add some garlic EVOO and a sprinkle of Italian herbs
Chops in a CI skillet with a bit more of the Italian herbs
Cut up a couple of simple salads
Saute veggies just a bit and set off to the side, then cook the chops. This is after the flip. Chops are pretty thin so they cooked quickly
Pile on the veggies
Ladle on a bunch of the marinara
Add Parmigano Reggiano cheese
A ton of freshly shredded mozz and cover with the pizza dome
About 10 minutes in. Looking good so far
All done. There really are three chops under all that mess
Plated with some rice pilaf and the salads on the side (and the obligatory foot shot for AZ)
Money shot.
Honestly, I'm almost embarrassed to post this but it was SOOOO good and I think at least a few folks might enjoy undertaking this one. Add to that the simplicity of putting it together and the fact that it's Italian themed (which a lot of folks are doing) and done in CI, it seemed appropriate to let folks see this. Just to put it into perspective, Tracy is OK with pork as a way to mix up the menu a bit but it's not her favorite protein by a long shot. She was blown away by this and ate every single bite. We had to pull some leftovers out of the fridge for the fat dog's post-dinner treat due to there being none of this left to share with her. It has been decreed that I will be making this again real soon, probably this weekend. Here is the recipe for the marinara:
1) 28 oz can San Marzano tomatoes
2) t fresh minced garlic
1) t kosher salt
1) t black pepper
Put in a blender or food processor and let it go for a minute. That's it. So simple yet so good. I wound up making a second batch that's in a jar in the fridge for quick access next time I need some....which may well be tonight with a different meal. Thanks for dropping in and hopefully tolerating one extremely ugly meal. If you make it though, you won't be disappointed with the flavor!!
