CI Grilled Smothered Italian Chops: WOW!! (W / Pics)

I'll preface the post by stating that this is about the ugliest meal I've ever posted here. What it lacks for in presentation though it more than makes up for in flavor. It was outstanding!! It was also very quick and very easy to put together. The idea for this one came together by way of a pizza thread recently where somebody posted a marinara (pizza sauce) that was made with San Marzano tomatoes and one spice (don't remember if it was salt or pepper). It sounded good....almost too good to be true it was so simple. Well, I made some and it was outstanding!! I did tweak it just a tiny bit but still a simple and amazingly good sauce.

Start with some boneless loin chops

Slice some red and yellow bell peppers, onions, add some garlic EVOO and a sprinkle of Italian herbs

Chops in a CI skillet with a bit more of the Italian herbs

Cut up a couple of simple salads

Saute veggies just a bit and set off to the side, then cook the chops. This is after the flip. Chops are pretty thin so they cooked quickly

Pile on the veggies

Ladle on a bunch of the marinara

Add Parmigano Reggiano cheese

A ton of freshly shredded mozz and cover with the pizza dome

About 10 minutes in. Looking good so far

Plated with some rice pilaf and the salads on the side (and the obligatory foot shot for AZ)

Honestly, I'm almost embarrassed to post this but it was SOOOO good and I think at least a few folks might enjoy undertaking this one. Add to that the simplicity of putting it together and the fact that it's Italian themed (which a lot of folks are doing) and done in CI, it seemed appropriate to let folks see this. Just to put it into perspective, Tracy is OK with pork as a way to mix up the menu a bit but it's not her favorite protein by a long shot. She was blown away by this and ate every single bite. We had to pull some leftovers out of the fridge for the fat dog's post-dinner treat due to there being none of this left to share with her. It has been decreed that I will be making this again real soon, probably this weekend. Here is the recipe for the marinara:

1) 28 oz can San Marzano tomatoes
2) t fresh minced garlic
1) t kosher salt
1) t black pepper

Put in a blender or food processor and let it go for a minute. That's it. So simple yet so good. I wound up making a second batch that's in a jar in the fridge for quick access next time I need some....which may well be tonight with a different meal. Thanks for dropping in and hopefully tolerating one extremely ugly meal. If you make it though, you won't be disappointed with the flavor!!

I "Like" it Robert, I've bookmarked it, it does look easy enough, and I will use my CI pans soon! That's a fine piece of work my friend, you don't need a cookbook, you are one! RAY

That's a great meal Robert! and I'm digging the ratios! excellent combo of ingredients. adding this one to the ever growing list!

and that is far from an unattractive meal. I'd take a skillet right now!
 
Don't be to hard on yourself Robert it's only a little ugly, only kidding I think it looks good. Bet the flavor was great
 
Looks awesome Robert! I have seen much worse looking meals and made several myself so no worries there! Big LIKE buddy I would eat this any day! Points for creativity.

You should do a good and beer pairing.
 
Robert that looks amazing to me! Not every good meal is pretty....but i know that was fantastic! Ive been working on an Italian cast iron dish I plan to post in the next week to come.....this has me even more excited to do so. Nice job man!

Very much appreciate it Zach. I wish the chops had been a bit thicker but I cut these myself and Tracy asked that they be a bit thinner. A previous batch I cooked that were pre-cut were kinda tough.

Nothing ugly about that! Chops buried in cheese , peppers and sauce!! Hell yes that’s right up my ally as is the colorful salad.

Thank you Jeff. It did have some vibrancy, I'll give it that. From the outset I wanted the color so used the different peppers. Also wanted a ton of melted cheese. Some of the cheese actually charred on the bottom of the skillet. When I was serving the food I made sure Tracy didn't get any of that....so I could have it all. :emoji_astonished:

Looks really good to me!! I’d eat that in a heartbeat, it’s the ingredients that make it beautiful not the camera lens.

It’s hard to go wrong with anything smothered in cheese and grilled veggies!

Very much appreciated Joe but if the old adage "you eat with your eyes first" holds true, you'd likely lose your appetite over this one. Actually the individual servings on the plate did not look bad, it was just that mess in the skillet.
