Hey all, so today was going to be a chill day and had plans to smoke a chuck roast. Well, this morning had coffee with folks and Dad mentioned he needed a few things done thru the week and would get them. After his last accident I know what he can and can’t do… so the stuff that is questionable I just do while I am there. I will never take away from him what he can do in his situation cause he loves doing things. I just don’t want him falling again. Anyway, sorry… so my plan was changed. I get home and there is not enough time to smoke the chuckie whole.

Thinking on what to do… I cut 3 nice steaks from the roast… then the ends cut up for a burnt end style snack.

The 2 at the top left are seasoned with
R Butts R Smokin Cherry Habanero rub, the one below that has some Pit Boss Sweet Heat rub and the cubes have some Pit Boss Kansas City rub on them.

On the smoker at 275* with a tray underneath with beef broth to catch the good stuff!

Will update as I go… or try to! Plan to go to probe tender, let rest 15-20 minutes before slicing.

Open to suggestions as well!

Awesome.

My dad loved beef and there came a point when it just wasn't meant to be anymore. Get that taste in his mouth any way you can...he will appreciate it trust me.

Update….

Few burnt ends off to snack on... pretty decent!

I don't care much for Q sauce... but the fam does... so into the pan with some butter and SBR Sweet Spicy Chili sauce.

Steaks are coming along... not quite done yet!

Sorry all for the delayed response… my bad for not posting sooner.

The steaks were so tender and juicy… and the burnt ends were just mighty tasty with an also tenderness inside!

Will definitely do a chuck roast this way again for sure! Nic loved both…

Burnt ends, nice sauce with a crunch outside… great tender texture inside.

Steaks… the collagen breakdown was great making a very nice juicy steak with a nice bit of char and the sauce (though I am not a sauce guy) actually complimented the steak well.

All in all was a real win since was limited on time. We will definitely be trying these again in not such a hurried cook!
