Ok, as promised I am going to let you all know how it went.

The cook was Ok but the the chuck steak was not the best, should do the chuck eye....

it looks tasty, the problem with the chuck steak is your smoking two different muscles that need different types of cooking.the top portion is part of the short ribs which needs a long smoke to help break it down like the bone in short ribs, and the bottom part is part of the chuck eye fillet(chuck delmonico) which is usually real tender. it still looks great from here though.

You're right Chuck Eye will give you flavor & Tenderness.
Chuck Steak can get tender, but you need an SV to make it easy.

Nice looking steak. I like chuck, but not for slicing. I only do them for pulling.

I have a couple chucks in the freezer ,,, you got me thinking . The chuck eye steaks are hard to come by , and like said in the other thread , they don't last long . If you have any of yours left , cube it up . Put it in a pan with some liquid and cover it up . Cook until tender .

What I did not eat the first night got heated up the next night - leftovers :emoji_wink:
