Did a chuck roast some ABTs a fatty and a few morels We found yesterday All was excellent. The chuck was amazing, Took a little longer then I expected, The chuck plateued for almost 3 hours at 140 and made my total cook time 8 hours, so I didn't get to rest it as long as I wanted but it was still good. Does anybody know how to shorten plateau times?

Bottom line - there isn't a way to shorten the plateau time. It's the natural process of the meat fibers breaking down to create the tender/shreddable results that everyone loves. This is the time to crack open a beer (or drink of choice) and watch the TBS chug out the top of the smoker.

I typically shorten my plateau times with captain morgan. Doesn't actually shorten the time, but takes my mind off the wait!
 
Thats a good one, almost spit up my morning juice!

If anyone ever finds a way, they'de make a ton of folks real happy!
