Great job on the chuck by CS Jr! I always pan my chucks and put them in the oven after smoking. I’m usually doing it for pulled beef for tacos, but the onion, broth, wine combo has me hungry for some down home cooking.

Ok, I love smoked chuck! It’s like pork belly as it has so many variations of yumminess that can be enjoyed!

so this is thirds!

took the remaining Aus Jus got that hot, added about 1/4 c red wine and let that simmer with the chuck then once reduced a bit, I thickened it added some peas & corn and then creamed it with a couple Tbs of mascarpone.....

had to add a fresh picked mater from the garden for color.....just the perfect lunch!

Looks great! And I'll take Chopsaws maters! We've only bought a couple from a guy from Nebraska that's been bringing sweet corn, melons, and maters up! Besides... anything creamed is close enough to gravy for me!

I bet the rest was fantastic .
I know I know..... but since we have 3 - 4 ft high plants, maters will be infesting about every meal and will even become a meal themselves for a while now....Sometimes its just life....and just in case you didn't notice they weren't touching the other food so they would play nice....LOL

Thanks Ryan! Our garden is zucchini, maters and tomatillos....going to have lots of chili verde to enjoy later in the year! Oh you should try to cream with mascarpone, Gordon Ramsey uses it all the time to cream things up. Much easier than heavy cream and adds a nice flavor!

He did you proud for sure. I like the additional meals also.
