Will a arm roast work???

I have several in the freezer.

I am thinking maybe not at fat as a chuck roast but if I can get it tender it should work.

I've smoked arm roasts before and they turn out pretty well. I would recommend wrapping to help maintain moisture. Cubing, saucing and turning into burnt ends should turn out great.

I could vac marinate also.
