Hey Rob
Sounds like a meal fit for a king and his family.
We're going out for Christmas dinner at friend's place. We (as in Miss Linda) will be taking a chocolate brownie platter.
Boxing Day we'll have our own feed at home. I'll be doing a double smoked spiral cut ham, basted with Miss Linda's honey and mustard glaze. We'll match that with Miss Linda's tortiere--Acadian meat pie made with ground beef, pork, veal, mashed spuds, and seasoned with cinnamon, nutmeg, allspice, and cloves, and covered with turkey gravy. Scallop potatoes, cauliflower, and cheese sauce. For desert, a South African Milk Tart topped with cinnamon (sounds disgusting, but as I soon learned, it easily became my favorite desert!!!)

Merry Christmas to you and yours

Smoked Sriracha Blackberry wings, seafood dip, ham, turkey, green bean casserole, misc other sides, and some red velvet cake, Hello Dollies, and likely pecan pie or apple pie...

When I saw Mirliton's Mike, I knew South Louisiana!  Sounds good.

Brekar, sounds like a feast.  I forget how some parts of the country seafood is much pricier than here and it's used for special occasions.

Nothing fancy here just a turkey, ham, sugar cured ham, (yes 2 different hams) Crab Dip, Cheese Ball, mac and cheese, sauerkraut, taters and whatever other vegies we fix and a ton of desserts. Merry Christmas to all.

In my Italian family there is always way too much food.  Especially on Christmas Eve.  So here we go:

Apps

Baked Clams (sister in law)

Cheese platter, smoked and unsmoked with crackers and pepporini (me)

Pastrami reuben sliders (me)

Stuffed Peppers and Olives (Brother in law)

Rice Balls (mother in law)

anti pasta

Mains

Rigatoni a la vodka (mother in law)

Penne with garlic and oil (me)

Meatballs with sauce (me)

Eggplant parmigiana (mother in law)

Chicken Francese (Sister in law)

Chicken Marsala (brother in law)

Fried shrimp (mother in law)

Sausage with Peppers and Onions (sister in law)

Roasted Potatoes (Brother in law)

Salad

Smoked then braised Short Ribs (Me)

Dessert

Assorted Cookies (I make about 30 different kinds, my mom's old tradition that i begrudgingly carry on)

Chocolates

Cheesecake

A bunch of other stuff too.  It is out of control!

Then Christmas is at my place and call it "Prime Rib in our Pajamas"  because everyone comes over in their pajamas, I make a prime rib and we eat that along side any of the leftovers from the night before.

I am getting nauseous just thinking about how I will feel Friday night haha

Happy Holidays everyone!!!

Well I make my own pastrami... So I take it, slice it into small square shaped pieces and put it on these little pieces of cocktail rye bread in a foil pan coated with some butter or butter non stick spray, top it with some Swiss, slather some spicy mustard on another piece of cocktail rye, put that on top. Drizzle a little melted butter over the tops wrap It in foil and bake in a 400 degree oven for about 15-20 minutes. I start with cold pastrami as to not overcook it. Bread comes out slightly toasty and buttery but still soft on the inside. This method is my go to for make ahead sliders like pulled pork or short rib. Anything with a good amount of fat heats up well this way. Here's a thread I did a while back:

OMG that's awesome.,, i got to do this one. Thanks..

Step one, cornbread made and left sitting on counter to stale for 24 before making it into dressing........Tomorrow I mix all my dressing and casserole stuff, put in pammed up pyrexs, cover and chill in the fridge so on Christmas, I can throw them in the oven at 350 and serve, while I focus on frying the bird and smoking the ham.

It was finger food/appetizer as a meal night last night with my family before we exchanged gifts.

Apps:

Crab Dip (my mom)

Swedish meatballs (mom again)

Jalapeno Popper dip (my aunt)

Sausage Cheese balls (aunt again)

Individual Dried Beef cheeseballs (aunt)

Jalapeno Cilantro Ranch dip (my little sister)

Blackened Chicken Wings (my dad)

General Tso's Chicken Wings (dad)

Smoked Cheddar, Gouda, Pepper Jack, Colby, and Monterey Jack (me)

Jalapeno Jelly and Cream Cheese (me)

Olive and Pickle Trays (mom and dad)

Crackers of all shapes, sizes, and flavors (grandma)

Cold cuts of all kinds for the kiddos even though they're all good eaters (grandma) - Going to be making sandwiches for a week lol

Desserts:

Pumpkin Pie (my grandma)

German Chocolate Cake (aunt again)

Vanilla Bean Cheesecake (aunt)

Pecan Pie Cupcakes (sister bought them at some bakery in TN)

Red Velvet Cake Truffles (aunt)

4 billion kinds of fudge but the only one that matters is the tub of sour cream fudge for me (mom)

Peanut Butter bonbons (aunt)

Baklava (dang good for my sister's first attempt at it)

Hello Dollies (wife)

Pretty family heavy as far as who brought what since I have had to work all week. I guess that's why I'm making everything for dinner on Sunday.

Work Menu for today:  (got to take care of the work family too)

5 gallons of spaghetti sauce out of the freezer (me)

Smoked cheese tray (me)

Garlic Bread (coworker)

Green Beans (coworker)

Salad (coworker)

Didn't want them at home so I also brought in most of the leftover dips and a pretty good selection of the desserts.

Coworkers were also tabbed for desserts so we had

Tiger Fudge

Brownies

Salted Caramel Chocolate cookies (these were delicious)

All told we're all stuffed and we fed most of our deputies/officers as well with food left over.

Menu for Sunday:

Baked Country Ham

Smoked Turkey

Cabbage Rolls (grandma-in-law's recipe)

Chicken and Dumplings (tentatively me but I have the feeling grandma will call this evening and "offer to make them if it helps" which means she's making them heh)

Mac and Cheese (non-smoked by request but still homemade and tasty)

Green Beans

Fried Corn

Salad

Yams

Probably something else, who knows.

Aunt is bringing the desserts so banana cake and apple cobbler I'd imagine. Whatever she brings will be good.

Merry Christmas to all of my Smoking Meat friends.    In Spring, Texas today it is 84 degrees and the air conditioner is running.    I hope everyone has Blessed Christmas with family and friends.   Let's remember what Christmas is about.

My daughter in law made a sausage and egg casserole, biscuits and gravy and fresh fruit for breakfast this morning.    She is cooking a ham for supper tonight.

This is the wife's day to play. Main event is a bone-in rib eye roast (our present to each other). Mashed potatoes with gravy, glazed carrots, some kind of pea salad she came up with, deviled eggs and fresh baked bread.
The neighbors have given us so many cookies we don't need a desert (We'll be bellies up by 6 anyway LOL).
I did take advantage of the warmer temps to try cold smoking some Cheddar..
Merry Christmas to all and Best Wishes for the new year!:usa:
