i got to do the christmas ham this year! i hit it with olive oil and gave it a loving massage with a pork rub,(pork is a precursor to hamness). gave it some smoke and then put it in the oven at 325F.
after 2 hrs i basted it every 1/2 hr with a homemade carolina style sauce. ham was a 17lb sugardale. served ten people with plenty left over. making ham pot pie tomorrow for supper. i wish y'all were here to enjoy it with me! happy new year!
