Me and my wife went to a new restaurant last night with friends and chicken livers were on the appetizer menu. They were fair at best and left me only wanting really good livers. I’m always looking for new ways to use my smokers so I decided to fix cast iron skillet fried chicken livers on the Chimp. I tossed the livers in a mix of flour and Dirty South BBQ SeXXXy Mama’s Rub which has a nice bite to it. I got the oil to about 380 and couldn’t be happier with the results! Thanks for looking!

Huge chicken liver fan. Still working to duplicate the seasoning used at a gas station years ago.
 
I wish I could get my wife to love them. I get mad nowadays when I get a thanksgiving turkey and they dont pack them with the giblets. Love those big turkey livers and use the heart and gizzards for gravy.

I would buy chicken livers by the pound and use them for dinner protien if my wife could dig them. I'm good with just coating in flour, salt and pepper and pan fried and Texas Pete hot sauce is a must eating them for me. Now you have piqued my interest and I want to get some House Autry chicken breader and deep fry them. The wife may just have to learn to like them...or she can eat something else for dinner! Maybe she can drown them my Chic Fil A copycat sauce...which would taste good on a napkin or flip flop...but I'll stick with Texas Pete!
 
Frying them on the smoker gave them a really nice extra flavor - to me, almost a slight hint of bacon from the hickory pellets maybe.

I do that same simple seasoning (occasionally add some smoked paprika and cayenne), and have done both pan and deep fried. Wife also dislikes liver, so usually just for an occasional or game day unless already have something else for dinner for wife. Oh well …

Good idea. Almost always do bacon and/or onions with beef liver, never tried with chicken.
I think I’ll try air fryer with smoke in my Ninja Woodfire sometime.
 
Try making a paté with chicken livers. Definitely a more mellow approach, but a good start to introduce someone that's not fond of chicken livers. Serve it on club crackers. We make a big batch during the holidays. Recipe is in my sig below.
