Wanted to do some chicken thighs. Went to the store & all they had was boneless & skinless. Kinda bummed but got them anyway. I planned on cooking these yesterday, but got called into work, right as I was gonna fire up the smoker. So tonight it was.
Hit them with some meat church honey hog, a cherry rub from treager & a bit of a Cajun blend. Started at 275 to get some good smoke, then moved up to 350 to finish them off.

Wife and kids thought they were great. It was just ok for me. Maybe to much sweet rub for me. Wife also made this cucumber & onion salad thing with white vinegar & sugar, that I love & some cornbread. Thanks for lookin...🇺🇲
 
Chicken looks delicious! The salad with cucumbers and onions does too.

Everything looks good to me. I grill boneless skinless a lot. Never did in the smoker. May have to try that as they look damn good.

Thanks. I figured with no skin to crisp up, I could go a bit lower for more smoke. Seemed to work good

Looks great . Love the salad . Huge fan of boneless / skinless thighs .
That's the best way to smoke 'em in my opinion . Grilled and sauced is my favorite way to do them . Nice work , and good lookin' meal .

looks like a fine finished products for boneless/skinless. We do thighs all the time on the lil' smoky Joe and charcoal direct. Th skin is usually a PIA but oh so scrumptious when cooked up.
I'd love to fine d-boned skin on highs.

looks like a fine finished products for boneless/skinless. We do thighs all the time on the lil' smoky Joe and charcoal direct. Th skin is usually a PIA but oh so scrumptious when cooked up.
I'd love to fine d-boned skin on highs.

Looks pretty tasty to me and like the others I love me some cuke salad and it seems almost everyone loves cornbread.

Boneless chicken thighs are my favorite cut of chicken, except for hand/finger picking the oysters off the back of the roasted carcass! Most people dont even know they exist and I get those weird looks like "what the hell is this guy burying his finger in to the back of the chicken carcass for?" I've gotten the same look when I punch my finger in to the neglected cheeks of a roast pig...unless that's just the owner ticked off that I'm picking his favorite...probbaly should have asked...Oh, well, they say "better to beg for forgiveness"!

Bone-in thighs are so forgiving I prefer the seasoned exterior with no skin. If I get skin on them I remove it, season with my Cajun blend (basically Emeril's essence with a couple tweaks) and roast them until a sort of chicken chicharrones. Best thing is, my wife doesn't dig them so they are all mine!:emoji_wink:
 
Great looking Thighs. Very nice color. I do bone in and skin on often. Grill, Oven, etc. My Wife doesn't eat them either, so all for me too!
