bough a family pack of thighs today. half of them go in the cure tomorrow.
Turkey or chicken thighs are one of the best things to cure in my opinion .
I've been using 1 tsp orange extract to a gallon of Pop's brine . Plus Sam turned me onto using distilled or spring water . It changes something for the better .

Looking for a different flavor to grill chicken thighs !
Tired of the Italian dressing and bbq sauce . Grilling !?
We are suppose to get rain for the next few days ? AMEN! WE NEED IT!
Might have to use the oven in house ? Which is OK?
Any ideas ? I wanted to surprise the family with a different twist ?
Might do teriyaki with rice and beans ?

- A fun one I've tried, also from Malcolm Reed: Bacon-Wrapped Jalapeno Chicken Thighs
I heard him talk about those on his podcast, and knew I had to make them.
They're really good...

But I also have great luck with Jamaican jerk chicken seasoning (I use one of the dry rubs, and the skin comes out bite-through or close to it without having to do anything special before or after smoking).

And the Cornell Chicken suggestion further up in the thread is one I heartily endorse.

My water is hard and was affecting my stuff. Dry curing with TQ as of late has proven that right I think. Just the few times I ran with distilled were clearly better.
 
All bone in chicken thighs need is garlic salt. Toss it on the bone side well, pull the flap tight around it. Grill indirect bone side down for about 30 minutes @350°f to an internal temp of 190°f. Put an extra fine salt on the skin to make it amazing. Popcorn salt works or put some in a coffee grinder and make it dust.

I like to keep it simple sometimes. Season with SPGO a day before, let rest in the fridge overnight and smoke/grill. I love doing thighs on my Kettle with a Vortex. Toss on a chunk of Post Oak and grill away!

I absolutely love this Achiote marinated chicken thigh recipe. Great by itself or in tacos or whatever. I highly recommend it.
