Chicken skin crispness.

Lately I've starting wings and thighs in the smoker,saucing and finishing in the air fryer.And I've been into using the Melindas Indian style sauces instead of the more traditional stuff,all three are great imo.

Couple of nights ago did some thighs in this manner and once in the air fryer got distracted for a minute and when I pulled them I was thinking damn I burnt them so I tried one and holy crap was it delicious.The very outside of the skin was super crisp and black but had zero burnt taste to it,just the opposite it had a great flavor from the sauce which happened to be the Korma style.Some of the best thighs I've ever had.

Sure wish I had taken some pics.Next time I do some chicken again this way I'll post up a proper thread of what I did with pics.
 
If the sauce contains sugar it will burn or turn black not necessary giving a burnt taste.

That particular one has a fair amount of natural sugar.All I know it was awesome,gotta do that again!
 
I've been experimenting with the smoking then finishing in the air fryer on a few items. Brats mostly. I haven't tried sauced wings in it, just seasoned. Im going to give that a try. Thanks for the post!

Not completely the same thing , but I've been grilling Brats a little ahead of time . Then I hold them in the air fryer on the keep warm setting while I finish the rest . Worked good .

Since I've been using My Air Fryer, I upped my Chicken finishing IT temp from about 165° to anywhere between 175° and 190°. It's great that way!!

How long Thighs in Smoker, then how long and what temp in Air Fryer? Sounds like a great method. I've been doing a lot of thighs lately, and would love some crispy skin. Thanks for the info!

Not so much on time but on IT,I usually will let thighs get to about 175 on the smoker.

In the air fryer I just keep'em in until nice and crispy but this last go around I got distracted and they were in just a little to long.But with that particular sauce it was a tasty mistake like noboundaries noboundaries said!

OK , so IT 175 in the smoker, then onto the Air Fryer til proper crispness? Just keep checking every few minutes I'm assuming.
