Brined 2 birds for 7 hrs.in thyme,rosemary,kosher salt,br.sugar,zat,forgot the con.o.oj.Had to try the spatch method.
 
Whoops didn't get all the info on here,Smoked for 4 hrs in smoke hollow el.cherry wood,sprinkled one with lemon/pep,one with garlic/pep.

Yups those birds look great-nice job there.brine is the way to go on poultry.
