Chicken Parmesan Pasta

Had a great camping weekend up in Mont-Tremblant...and what makes these camping weekend so much fun is that you can have a lot of fun trying new recipes while sharing good company and good drinks.

Having done a nice Flank steak the previous evening, I figured I'd go for a pasta meal with some smoked bird...so here we go;

I lightly seasoned some chicken thighs with a little kosher salt and black pepper, wrapped them up with bacon and tossed them on the Joe Jr.

Temps set at 250 until these beauties reached 165...took everything in me not to eat em all up right then and there;

Pasta sauce was very simple;

1 tsp Italian seasoning
1/2 tsp garlic powder
1 medium yellow onion, minced & sauteed
3 cloves garlic, minced
1 jar of Marinara Sauce
1 cup mozzarella cheese
1/2 cup Parmesan cheese

I chopped up the bacon wrapped thighs and tossed them into the sauce. Then mixed the pasta in and done! Easy dinner and was another hit with the family!

It is a great place. Was absolutely beautiful this past weekend. The leaves are incredibly colourful. Great place in the fall.
