Afternoon folks!
A few days ago I was digging around the web looking for something to do with chicken. I was leaning towards chicken French. Then I saw a recipe for chicken Lombardy. Hmm. Sounds promising.
Sliced and pounded thin chicken breasts. I used three breasts. For 6 portions.
1/2 tsp each of:
salt
pepper
garlic powder
1/4 cup dry marsala
1.5 cups chicken stock
8 ounces fresh sliced white mushrooms
Sliced green onions. I used three.
1 cup mozzarella cheese shredded
1/2 cup Pameasan cheese
2 tbs butter
Sauté mushrooms in butter until tender. Removed and set aside. Do not drain pan.
Dredge chicken in the flour.
Add 2 more tbs of butter to pan and fry chicken for a few minutes on each side.
Remove. And place in a greased baking dish. Sprinkle the mushrooms on top.
Again. Don't drain the pan.
Add the chicken stock, marsala, salt, pepper, and garlic powder to pan.
Bring to a boil. Then reduce to simmer and cook for ten minutes stirring occasionally.
Pour liquid over chicken.
Put the diced green onions over the chicken.
Mix the two cheeses together. And put on top of chicken.
Bake uncovered in a preheated 450 oven for 12 to 15 minutes.
Amazing dish! This will be on the menu. We had with mashed taters.
