So Jeff sent out a weekly email about chicken bombs (link is below) and it sounded great. I am sitting on 30lbs of chicken breast from Restaurant Depot so this sounded great. I made a cream cheese mixture with "normal" peppers for the family (added some garlic as well) and I did hot peppers for mine. Turned out awesome...although it started to snow and wind was ridiculousness today (65 - 2 days ago today it flurried???). Needed to do last 20 minutes in the oven, and broil to crisp. Turned out great.

Seemed like a good night for some Chicken Bombs.
Brined for a few hrs, then a nice rinse and coated with Jeff's rub.

Sliced down the middle to help hold the cream cheese. 3 with jalapenos mixed in, 3 without ( wife )

Put a small slice in across the width to fold. Another coat of rub all around this side.

Wrap with bacon and a little more rub.

Smoker warmed up to 230°, With Rec Tec pellets and a tube of Lumberjack Cherry.
1.5 hrs and increased temp to 275° to crispen bacon.
Another hr and IT 163°. Pulled and rested 10 mins

Plated With some asparagus,chopped onion, and some zucchini strips, and t. toast.
