Chicken and pancakes

I wanted to make something that was very filling and cheap tonight so I threw this together, a variation of my favorite "pennsylvania dutch" Chicken and waffles.
I was feeling thrifty and bought a whole chicken, butchered it up and used the scrap to make a chicken stock with some onion and bayleaf.The chicken I seasoned with oldbay and dusted with flour before browning it in some bacon grease.



Then I skimmed my stock of grease and added it to the pan, a bit of stock and the onions made it in there, but I rendered it down to just a clear rich flavored oil for my roux.




wisk in my stock, add back chicken , simmer some more, add chopped scallion bottems, vegetables and season to taste.
 
OMG I think your on to somthing Dganor I knew I seen that some where before....

That was awful mean. It started out looking different, ahem, and ended up looking great. I think it was called Chicken ala King. So he likes pancakes instead of dumplings, so what?

What have you contributed to the site with QVIEWS? I am apalled at your post. I see you have only made 40 + posts, what do you know? In the 3 months here this is the first hurtful thing I have seen posted here' you are an insult to the members here. If you don't like / agree with someone's idea of what they think is good just ignore it, geeez!

I think it looks great and it is definitely thinking outside the box, which is something I always admire. I make a chicken and dumpling dish which is similar, although without the maple syrup.

I don't think there is anything to be gained by your post. You are entitled to your opinion but we prefer that you express it in a way that is not derogatory or insulting to the poster.

Please keep that in mind in the future.

Thanks for the pics of the method too. Often that is left out and makes it hard to replicate!
 
To the OP, thanks for bringing us this dish. I have often times found myself eating meals (esp. those that are meant to be filling and on the cheap), that don't appear (in the conventional sense) appetizing but once eaten are actually pretty good. Methinks this would be one of them.

Thanks for rallying in my defense folks, it is true that sometimes the best tasting food is not the prettiest. but eating this stuff sure puts a smile on your face. It is just chicken w/ dumplings/w biscuits w/waffles w/ toast points what have you. But it was the first time I did it with pancakes in fact a great pancake recipe Ive recently scored (ill share that too). What made me want to share the qview was the different steps that went into building the flavors. So yea it does look like something off a chuck wagon but it was soul satisfying.


--Buttermilk Pancakes Recipes


Ingredients:

***Dry Mix:***

3 cups white flour

2 teaspoons sugar

1 teaspoon salt

1 tablespoon baking powder

1 tablespoon baking soda

***Wet Mix:***

2 eggs

1 quart buttermilk

1/2 stick melted margarine

Directions:

Mix dry ingedients, set aside.

Beat eggs with buttermilk.

Add dry mix to wet mix then add melted margarine.
 
I think it looks like a train wreck, one that i'm gonna be i the middle of this fall, definitly on my list of something to try. My dots are some of the pickiest eaters out there, they seen that and they both lit up "When can you make that", i told them thats something i would do when it's cooler out, the youngest asked if we could turn the A/C down, then it would be cooler.
