I always like trying new sauces and glazes so when I found out about this Carolina Pig Polish on this site I had to try some. I contacted Robin who makes this sauce and managed to purchase a bottle which he sent me. Robin is a great guy to deal with by the way.
I actually got the sauce a few weeks ago but just got around to trying it yesterday.
First off this sauce is definetley unique in it's flavor profile. It's like nothing I have ever had before.
The first flavor to hit you is the sorghum molasses followed by a vinegar flavor followed by a little heat that is quickly followed by some sweetness. In short this stuff is awesome! It is not primarily a sugar based sauce like so many are. It dosen't over power the meat which is something I always look for in a sauce. I like the flavor of meat and don't want it masked over by a sauce. This sauce does not do that.
I generally don't sauce my ribs on the smoker but prefer to serve it on the side but I decided to forgo my usual routine to see how this sauce would color up.
This is not a thick sauce by any means which is another plus in my book. I like sauces on the thinner side. So after my spares went through the 3-2 it was time for the 1. The last 15 or 20 minutes of the 1 I applied the Pig Polish. Just one application was all I used.
The color is beautiful!
This sauce is definetly going to be added to my very small stable of sauces!!
I did a mock tender chuckie with the spares. On the smoker.
While chuckie is in the smoker I'm making a little hot tub for him!
No water in this hot tub!
Chuckie hit aninternal of 145 so it was time for him to hit the hot tub. Put a cover on and back in the smoker.
A few hours late it was ready.Took it out pulled it and made me a sammie!!
