can I smoke jerky in all this heat

Hey all,

I'm here in Charlotte, N.C.

I wanted to smoke some jerky over the weekend but the temperature will be about 100 degrees ouside.

I was going to try to smoke the meat at 150 degrees.  But now, I'm wondering if it'll be possible because of the weather. I'm thinking, since it's going to be so hot outside, my smoker won't be able to get that low.

Is it possible or will it be to hot outside?

Also, normally when I smoke, I get the smoker upto 275 and then will set the temperature to my desired temperature. Since I'm going to be smoking at such a low temperature, should I preheat the machine up to 275?

I assume you want to use your MES not GOSM, right? I would try and do a test run tomorrow in the heat (if possible) and see what kind of temps you could achieve. What are you going to use for smoke? Do you have an AMNPS?

When it's this hot my GOSM will be 130* when sitting in the sun and I could probably do jerky with no fuel just my AMNPS.

I have smoked jerky in it just using 6 briquet's of charcoal and some hickory chunks, it wasn't hot outside, and it maintained around 130*. That's an idea too.

Hey Dave,

I'll be using the MES. I other day I turned on the MES and it started at 120. These darn southern heat waves.  lol
