Going camping this weekend. I will have the pickup truck, so the smoker is going with me.

Plan to make trashcan potatoes, which can be prepared prior to going, then thrown on a grate with the meat, but unsure what would be an easy meat dish to smoke, with limited facilities and utensils? Anyone?

I've done lots of Ribs, but that usually involves pulling them out, wrapping them part way thru, unwrapping later, etc.

Looking for an idea that is simple, that can allow me to sit in my lounge chair, drink my beer, and have dinner ready later in the day with little to no extra work

boston butt..............easy to do, hard to mess up
get a 6 lber, put on at 8am, better ready for supper........take it to 170 if you just want to slice it, or go all the way to 190-200 for pulling

I agree...do some ABT's, a fatty or 2, and smoke up some steaks or chicken for something different. Even some rubbed or marinated pork chops. Grab a cooked ham and smoke it for a few hours. Sausages, brats, the list goes on and on.

Not sure about the butt...unless you are able to babysit the smoker all day. You said you were camping so I assume you have some activities planned...Hiking, swimming, etc... and you may not be at or near the campsite all day.

well joe........he DID say summin bout sitting in a lawn chair and drinking beer........so thats why i mentioned the butt

Yeah WD, I saw that. I was hoping he didnt mean all day...LOL

When I camp I like to be out and about.

But if he did mean all day in the chair, then bar none the butt is the way to go. I guess he will be taking his own firewood too.

I would suggest Country Style Ribs, they cook relitively fast and all you need is rub, a throw-away alu. pan and some alu. foil. Cook ribs for a couple of hrs., place in pan, foil and place back in smoker for an hr. or so to tenderize. Throw away pan and foil when finished, clean-ups done. My .02 worth.

I agree with the others, and by your avitar you prolly going to berrago-have fun and say hi to my sis-she hates you off roaders tearing up her desert.

Thx all, lots of ideas to pick from now.

Not heading to the desert, just to a local campground.

Here is a dessert that i do on a the smoker that has became a hit in my small world. Ya'll have proably heard of it but i'll throw it out there anyway.

Core and peal your favotie apple...i like granny smiths.
stuff the middle with as much of a snickers bar as you can
on top put a mound of butter, brown sugar, and cinnimon.
Wrap it in aluminum foil and throw on the smoker about an hour before the meat is done.

i'm telling you it is great.

man i posted this in dessert thread before i read your post. This works great around a camp fire also.

I've done Country Style Ribs at camp before and had time to goof off a little also. We hauled my heavy gauge smoker along so keeping the temp even wasn't an issue. Also the ribs usually have an ample amount of fat content to keep them moist. Just give them a rub (the night before) and throw them on. As long as the temp is high enough to cook but cool enough that they don't turn to worthless chunks of leather you'll be in good shape. Chicken and brats are a good choice and don't require a lot of effort either.
