Does anyone use one of these? I am making jerky and noticed that the water pan, (no water added for jerky), completely blocks all smoke from rising to the meat. I used the tray to catch drippings but I have to remove it to get any smoke out of the top vents. Terrible design or is that how water pans work? This is my first attempt so I'm clueless...lol.
