Hi All I was wondering IF the point of the brisket would be good in sausage..Maybe 1/2 of each point/brisket & pork butt, or maybe all point?

The reason I'm asking is that I just picked up 2 packers a10 & 12 pounder.Most of IT is going toward smoked brisket, some for hamburger meat.

Why in the world would you want to ruin good brisket for sausage and hamburger? 

Plain beef and pork makes excellent sausage but really crappy brisket!

Brisket is used in part for hamburger meat by one of the best meat suppliers in NYC area.They even had a show on the Food Channel about them..Plus I just brought a lot of brisket for just me & my wife. That's why the question about brisket for sausage.

I was thinking the the point had enough fat for sausage.Maybe a mix of chuck & brisket.

Yes.. The point will be good for some sausage.... I am not a big fan of burnt ends and rather use the point for some sausage....
