Brisket going full naked!

Total was about 11hours. 4 hours on low = 180, then the rest of the cook at 275. I like to run it on low at first to ensure I get the smoke level i like.
 
Nice work, the brisket looks amazing!
I'm 110% for no wrap for briskets. Next time try some 100% Mesquite smoke in a pellet tube for about 6-9 hours and be prepared to be amazed at the flavor! :)
