Hello! I'm excited to start smoking more. I have an older smoker from my brother and first time used it cooking chicken wings and it seemed to have burned them. I'm thinking about replacing my Thermator as it shows Cool/Ideal/Hot.

It stayed on Idea but the wings ended up a little burnt. Any ideas or thoughts/comments I would love to hear them for a new Gas Smooker connoisseur like me!

A quality multi probe therm is a must.

Those old Brinkmanns are pretty basic but are good to learn on.My first smoker was a Brinkmann vertical charcoal smoker.

I started out on a horizontal brinkman off set they do get hot fast I had to control the air intake and use small chunks of wood to control heat i don't know if you can put tuning plates in those or not I would check into that to control flow. good luck there great little smokers.
 
Welcome. Inkbird is a site sponsor and has some great products. You can get a thermometer that can tell you actual smoker temp as well as some extra probes for the meat. I’d recommend them to see what your smoker is actually doing. Also for doing chicken it helps a lot and a lot of people do it. You can smoke the chicken at whatever temp and then right before it’s don’t throw it on a hot grill to help the skin become crisp instead of rubbery.
